BLACK CABBAGE AND BEANS SOUP

Ingredients
- 1 bunch of black cabbage
- 2 cups of fresh peeled beans
- 3 tomatoes
- 2 potatoes
- 1 carrot
- 1 onion
- 1 celery stalk
- savory (or thyme) to taste
- extra virgin olive oil to taste
- salt and pepper to taste
Instructions
Boil the beans for half an hour with a pinch of salt and a little extra water to get good broth.
In a skillet put 2 tablespoons of extra virgin olive oil and brown the onion first and then add the savory or thyme.
Add the chopped potatoes and then the sliced carrot and celery.
After a few minutes, add the black cabbage leaves cut into strips and season with salt.
Let it cook a few minutes with the lid on.
Remove the lid and add the tomatoes.
Now add the beans with their broth and let them cook for about 20 minutes.
Add pepper and oil to taste.
