BLACK CABBAGE & BEANS SOUP

Ingredients
- 1 Bunch Black Cabbage
- 2 Cups Fresh Peeled Beans
- 3 Tomatoes
- 2 Potatoes
- 1 Carrot
- 1 Onion
- 1 Celery Stalk
- Savory (or Thyme) to taste
- Extra Virgin Olive Oil to taste
- salt and pepper to taste
Instructions
- Boil the beans for half an hour with a pinch of salt and a little extra water to get good broth
- In a skillet put 2 tablespoons of extra virgin olive oil and brown the onion first and then add the savory or thyme
- Add the chopped potatoes and then the sliced carrot and celery
- After a few minutes, add the black cabbage leaves cut into strips and season with salt
- Let it cook a few minutes with the lid on
- Remove the lid and add the tomatoes
- Now add the beans with their broth and let them cook for about 20 minutes
- Add pepper and oil to taste
