Chocolate cream puffs are mouth-watering treats perfect for an evening treat or as a dessert to offer at dinners or lunches with friends.
Chocolate cream puffs are made with a batter that will be divided into spoonfuls and baked in the oven, separately you will prepare the chocolate cream that will then go into the cream puffs.
Here are the steps for the chocolate cream puffs.
For the dough:
- 1 cup of all purpose flour
- 1/4 cup of butter
- 4 eggs
- a pinch of salt
FOR THE FILLING
- 2 cups of whole milk
- 1 cup of sugar
- 1/2 cup of all purpose flour
- 5 eggs
- 1 cup of dark chocolate
For the dough:
boil some water (about 4 cups) with butter and salt and flour in a saucepan, mix and cook for 3 minutes; when it has reached a smooth consistency, remove from the heat, let it cool and pour in the shelled eggs one at a time, continuing to stir.
Pack on a buttered baking sheet or even on a sheet of equally buttered baking paper the puffs and bake them in a 350 F oven for 20 minutes.
For the filling (chocolate cream):
in a bowl, whisk the egg yolks with the sugar and add the flour.
In a saucepan, pour the milk and add the chopped dark chocolate; once it comes to a boil, pour in the egg yolks with the flour and stir, then put back on the heat and let it boil for 3 minutes.
Stuff the cream puffs with the chocolate cream, saving some for frosting on the outside as well.
Arrange them in a serving dish and store in the refrigerator until ready to serve.
To cover the cream puffs, prepare the frosting by melting chopped chocolate in a bain-marie along with water and butter.
