An easy and delicious Italian recipe for a fantastic pasta dish with a superlative sun-dried tomato sauce.
1 lb penne pasta
3 tbsp olive oil
5 cloves chopped garlic
1/2 tsp crushed red pepper flakes
1 cup sun dried tomatoes
1/2 cup tomato paste
1/4 cup fresh or dried basil
1/2 cup almond milk or regular milk
salt to taste
Place a large pot of water on the stove. Add a generous amount of salt.
Boil the pasta al dente following the directions on the package
Saute the chopped garlic in olive oil. Cook until the raw smell of garlic disappears. Add the crushed red pepper flakes. Cook for half a minute.
Add the sun dried tomatoes and saute until the tomatoes are soft.
Add the fresh or dried basil. Also add the tomato paste and salt.
Add the almond milk or regular milk.
Cook till the sauce starts to thicken. Blend into a puree. Toss the boiled pasta into the sauce. Serve immediately.
