Delicious Orange Chicken with Saffron

An easy and colorful recipe with baked chicken thighs flavored with orange and refined with saffron and thyme.

  • 4 chicken thighs
  • 2 tablespoons of orange juice
  • 4 tbsp olive oil
  • 2 tablespoons granulated mustard
  • 2 tablespoons of raw sugar
  • 1 pinch of saffron stigmas (20 medium saffron threads)
  • 4 red onions
  • 3 garlic cloves
  • 2 oranges
  • salt
  • pepper
  • 4 sprigs of thyme



  • Mix the orange juice with the oil, mustard, sugar and saffron until the sugar has dissolved.

  • Divide the onions into quarters and, without peeling them, crush the garlic cloves.

  • Grease the chicken, onions and garlic with the marinade, cover and let stand in the refrigerator covered for about 2 hours.

  • Heat oven to 392 F.

  • Cut the oranges into thick slices.

  • Season chicken with salt and pepper.

  • Pour chicken and marinade into an ovenproof dish.

  • Add orange slices and thyme sprigs.

  • Bake for about 40 minutes.

  • Sprinkle with chopped parsley to taste.
