GRANDMA’S SICILIAN FRITTATA: PESCE D’UOVO (EGGFISH BUT NOT A FISH RECIPE)!

In fact, they are delicious and quick frittatas made of eggs, pecorino cheese and breadcrumbs flavored with garlic and parsley.

The recipe, belonging to the Sicilian gastronomic tradition, is the pride of grandmothers who never think twice about frying.

 

 

 

Yield: Serves 3
INGREDIENTS:
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/4 tsp chopped garlic
  • 1/3 cup of grated Pecorino Romano cheese
  • chopped parsley to taste
  • 4 tbsp whole fresh milk
  • salt and black pepper to taste
  • sunflower oil for frying as needed
METHOD:
1. Finely chop the parsley. Set aside.
2. Beat the egg.
3. Add the chopped parsley.
4. Add the breadcrumbs, chopped garlic and grated pecorino. Mix well
5. Add the milk and season with salt and black pepper to taste. Mix to combine. Beat until the mixture becomes homogeneous.
6. Place a frying pan with oil on medium heat. Spoon the mixture in batches into the oil.
7. Slowly the fritters will begin to take shape. Fry on both sides until light golden brown in colour. Serve hot with your favourite dip.
