FRITTELLE DI PERLE AL PARMIGIANO (PARMESAN PEARLS FRITTERS): ONLY 2 INGREDIENTS!!

Parmesan pearls are a sin of gluttony that no one will be able to resist.

They are perfect to share with family or friends, as an appetizer during a dinner party or as a crunchy finger food for an aperitif.


 

 

 

 

SERVINGS: About 30 Parmesan Fritters

INGREDIENTS:

  • 1 cup of grated Parmigiano Reggiano cheese
  • 2 egg whites
  • oil for frying

 

DIRECTIONS:

Take a bowl and mix the grated Parmigiano cheese together and the egg whites (not whipped!) until firm and smooth.

With damp hands, take small portions of the mixture and create small balls of about 5 grams each; fry them in hot oil until golden brown.

On contact with the oil, the Parmesan Fritters will swell like balloons and then deflate slightly.

Place them on paper towels as you fry them to remove excess oil and serve hot.

P.S. For frying, I recommend, as usual, using a small pot with a small diameter and a high rim so that you use less oil and get a perfect fry.
