FRITTELLE DI ZUCCHINE (EASY ITALIAN ZUCCHINI FRITTERS)

Zucchini fritters are a mouthwatering and easy-to-make vegetarian dish; without rising, they can be prepared in just a few minutes.

INGREDIENTS:

  • 2 zucchini
  • 2 eggs
  • 1/2 cup of all purpose flour
  • 1/4 cup of Parmigiano Reggiano or Pecorino Romano cheese
  • salt and pepper to taste
  • oil for frying

 

 

DIRECTIONS:

Grate the zucchini using the large-hole part of the grill pan.

Put the frying pan with the oil already on the stove over medium heat.

In a bowl combine the zucchini, eggs, flour, Parmigiano cheese salt and pepper.

Mix well and quickly without working hard.

Pour the mixture by spoonfuls into the hot oil and brown them on both sides, turning them several times so that they cook well.

Remove the fritters from the pan and lay them on paper towels and then pass them on a serving plate.

A pinch of salt and straight to the table!
