Gnocco fritto is one of the traditional Italian dishes that have made history abroad as well.

Crispy and light, gnocco fritto is ideal to accompany cold cuts and cheeses of all kinds.

Fried gnocco is much more than just an alternative to bread, it is in fact one of the ideal protagonists for aperitifs and entire informal dinners under the banner of taste and simplicity!







  • 4 cups of all purpose flour
  • 1/4 cup of lard
  • 3 tbsp of active dry yeast
  • 1/2 cup of milk
  • 1/2 cup of water
  • salt to taste
  • oil for frying




Dissolve the active dry  yeast in the water and milk at a temperature of about 85 F, then pour it into the flour and start kneading.

Add the lard and salt.

Continue kneading until the dough is soft, smooth and elastic.

Let the dough rise, covered with a plastic sheet, at room temperature for about 30 minutes.

Roll out the dough with a rolling pin to a thickness of 1/8 inches and cut out lozenges not with a cogwheel.

Fry on both sides in plenty of hot oil and serve hot accompanied by cold cuts or cheese.
