NONNA’S APPLE PIE CREAM CAKE

YIELD: Serves 5

INGREDIENTS:

  • 2 eggs
  • pinch salt
  • 3.52 oz sugar
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 tbsp lemon zest
  • 70 ml whole milk
  • 0.70 ounce butter
  • 2.8 oz plain flour
  • 1 tsp baking powder
  • 3 medium apples
  • 4 tbsp lemon juice
METHOD:
1. Slice the apples into thin slices. Add 4 tbsp of lemon juice. Set aside
2. Beat the eggs with salt and sugar until light and fluffy
3. Add the zest of lemon
4. Add the milk and beat again.
5. Add the melted butter and mix with the help of a wooden spoon.
6. Now add the flour mixed with the baking powder. Fold gently with the help of a wooden spoon.
7. Add the sliced apple and mix to combine.
8. Pour the prepared batter in a lined cake tin.
9. Bake in a preheated oven at 356 F for 40 to 50 minutes or until light golden brown in colour.
