How to Make BAKED BELL PEPPERS ROLLS

Baked bell pepper rolls are just an idea, in the sense that conceived as a recipe they leave room for an infinite number of combinations aimed at making the filling.

In a light version, like mine, I also omitted the salt, but it is clear that you can add it either directly on the grilled bell pepper “rib” or in the breadcrumb filling.

INGREDIENTS:

  • 5 yellow and red peppers already roasted and skinned
  • 1 tbsp breadcrumbs (per roll)
  • grated Parmigiano Reggiano cheese to taste
  • 1 generous handful of pine nuts
  • a pinch of salt
  • pepper to taste
  • extra virgin olive oil to taste
  • scamorza cheese (about 1 medium stick per roll)

 

DIRECTIONS:

After cleaning the peppers, previously roasted, divide them into “ribs”,  into large and convenient portions to wrap them like a rolls.

Stuff the inside with about 1 level tablespoon of breadcrumbs seasoned with the ingredients listed above and place a scamorza cheese stick on top and wrap gently.

Place on a non-stick baking sheet or baking dish and bake in a hot oven for about 10 minutes at 350 F, at least the appropriate time to spin well the cheese inside the rolls of baked peppers.

Serve when still warm and stringy.
