DIRECTIONS:

Preheat the oven to 356 F.

Grease a 10 inches cake pan, then flour or grease it.

If you prefer, you can line it with the appropriate paper, wet and well wrung out for better adherence to the oven and the edges.

Start by preparing the filling because it will need to warm up before being used.

Pour milk and lemon zest into a small saucepan and bring to the boil over a gentle flame.

Turn off the gas and allow to cool.

In a tall, large bowl, beat the egg yolks and sugar with an electric beater; when the mixture is thick and frothy, gradually add 1/3 of the milk, without stopping stirring.

Sift the cornstarch directly into the bowl, and incorporate it, mixing well to prevent lumps from forming.

Put the saucepan with the remaining milk back on the gas, turn the gas on low and gradually add the egg and starch mixture.

Stir with a hand whisk for about ten minutes; when the cream thickens, turn off the stove and let it cool.

Preheat the oven to 356 F.

Rinse the apples, dry them, remove their skin and core, then slice them into wedges.

Sprinkle them with lemon juice so that they do not blacken and prepare the mixture.

In a bowl, whip eggs and sugar with an electric mixer, gradually adding milk, oil, lemon peel, baking powder and flour previously sieved.

When the mixture is smooth and frothy, transfer it into the mold, fill it with custard and decorate it with the apple segments.

Bake for 35 minutes, do the toothpick test, if dry remove your cake, if wet continue cooking for another 5 minutes on the lowest shelf of the oven.

Take out your Nua Cake and let it cool before unmolding it and enjoying its heavenly flavor.
