How to Make Incredible Italian STUFFED ARTICHOKES

Stuffed artichokes are a classic of the Mediterranean diet and rural cuisine.

An ancient dish, nutritious and tasty. Always perfect as a second course or even as a single dish for a healthy meal.





  • 4 artichokes
  • 10 oz of minced beef (70% veal and 30% pork)
  • 1/2 cup of stale bread
  • Grana Padano cheese to taste
  • 3.4 oz of milk
  • 1 egg
  • extra virgin olive oil to taste
  • salt and pepper to taste
  • parsley to taste
  • 1 garlic
  • 1 lemon



Soak stale bread in milk.

Clean the artichokes, removing the tougher leaves, once you reach the heart, remove the stem and trim the artichokes, then spread the leaves exerting pressure outward, with a teaspoon remove the fluff and place in a bowl with cold water and juice of 1 lemon.

Place the minced meat in a bowl, add the grated Grana Padano cheese, the egg, the parsley, the minced garlic, the well squeezed stale bread, and finally the salt and pepper.

Mix everything well so that all the ingredients are combined.

Fill the artichokes with the stuffing and place them in a non-stick pan, brown them and then pour in enough water to cover the artichokes; add a pinch of salt and cook for about 30 minutes.

Evaluate the cooking with a fork and when they are tender, transfer them to an oven dish.

Decorate with chopped parsley.
