Italian Vegetables Recipes


Today we prepare together the PARMIGIANA OF CARCIOFI (Artichokes Parmesan).

Very easy to make and I guarantee you super good and easy!

  • 7 fresh artichokes
  • 1 cup of mozzarella cheese
  • 1 garlic
  • 1 tbsp of extra virgin olive oil
  • 2 cup of water
  • parsley to taste
  • 8 tbsp of butter (1 stick)
  • grated Parmigiano Reggiano cheese to taste



If you use fresh artichokes: clean and slice them, put them in a bowl with water and lemon for 5 minutes.

If you use frozen ones go straight to cooking.

In a non-stick pan, put a tablespoon of oil and garlic, add the artichokes, parsley and 2 cups of water, cover with a lid and cook until the artichokes are soft.

Remove pan from heat and let cool.

Cut the mozzarella and butter the 7 inch baking dish.

Form your parmigiana by first placing a layer of artichokes and then the mozzarella, finishing with a sprinkling of grated cheese.

Bake in a preheated oven at 180° for 15/20 minutes.
