Limoncello cookies are great to accompany a cup of coffee or tea.

Makes about 20 biscotti
INGREDIENTS:
- 1½ cups + 1 tbsp of 00 flour
- 1 cup of granulated sugar
- 3 tbsp + 2 tsp of butter softened
- 3 tbsp of Limoncello
- 1 large egg
- powdered sugar to taste
DIRECTIONS:
In a planetary mixer fitted with the hook, put all the ingredients and knead for 15 minutes.
Cover the dough with plastic wrap.
Set the dough to rest 30 minutes in the refrigerator.
After 30 minutes, take the dough and roll it out with a rolling pin on a floured work surface.
Using the mold provided, start forming the cookies.
Place the cookies on two baking sheets lined with parchment paper.
Bake one pan at a time in a preheated 356 F oven and bake for 20 minutes.
Once all the cookies are baked, let them cool.
When they have cooled, sprinkle them with powdered sugar.
