Italian Pasta Recipes Italian Vegetables Recipes

Pasta and broccoli is undoubtedly one of the most delicious first courses of our cuisine.

The piquancy of the hot pepper complements the taste of the broccoli which is flavored by sautéing it with anchovies.

We have chosen orecchiette, but you can feel free to prepare pasta and broccoli with the format you like best.

Making pasta with broccoli is really simple and this version will be loved even by those who do not particularly appreciate them.

Try this version and if you are looking for other recipes with broccoli, here are some ideas to try:

  • 14 oz of Orecchiette Pasta or other format
  • 35 oz of Broccoli Rabe
  • 2 oz of anchovies in oil
  • 2 clove of garlic
  • 1 red hot chili pepper
  • 4 tbsp of extra virgin olive oil
  • salt to taste
  • grated Parmigiano Reggiano cheese to taste

Wash the broccoli, divide the broccoli into florets keeping the less woody part of the stem that you will cut into small pieces.

Bring a pot filled with salted water to a boil and plunge in the broccoli stalks.

After 5 minutes, plunge the orecchiette pasta into the same pot with the broccoli stalks.

A couple of minutes after you’ve tossed the orecchiette pasta into the water, add the broccoli florets and bring everything to a simmer.

While the pasta is cooking with the broccoli, heat a generous amount of extra-virgin olive oil in a frying pan, then add the anchovy fillets in oil and the roughly chopped garlic cloves; the anchovy fillets should melt in the hot oil.

Drain the pasta and broccoli and transfer to the pan along with the anchovies, toss briefly, season with a handful of grated Parmigiano cheese and serve.
