These cookies turn out crispy on the outside, soft on the inside, and the great thing is that when you dunk them in milk, tea, cappuccino…wherever you want in short, they absolutely do not unravel.
They just get soggy!
Makes about 8 cookies
- 4 eggs
- 1 cup of fine sugar
- 1/2 cup of sunflowers seed oil
- a drop of limoncello
- grated peel of a lemon
- 1 tsp of baking powder
- 3 cups of all purpose flour
- brown sugar to taste
Add eggs, sugar and with a whisk begin to mix.
Add seed oil and continue to mix.
Add a drop of limoncello and the grated rind of a lemon.
Add the baking powder and mix well.
Finally add about 3 cups of flour.
Continue to knead by hand on a pastry board.
Form a soft and slightly sticky dough.
Prepare a baking sheet lined with parchment paper.
With your hands, take a small piece of dough and form a loaf that you will roll in brown sugar.
Bake at 390 F for 25 minutes.
The cookies are ready!
