INGREDIENTS:
- 2 eggs
- 2½ cups of all purpose flour
- 1/3 cup of butter
- 1 cup of Limoncello or lemon juice
- 1/2 cup of granulated sugar
- zest of 1 lemon
- 1 tbsp of baking powder
- seeds oil to taste
- icing sugar to taste
DIRECTIONS:
In a mixing bowl, combine the eggs with the sugar and beat until creamy.
Add the grated lemon zest, limoncello and butter previously melted in a small saucepan.
Mix everything well, adding a little at a time the flour and finally the baking powder.
Pour the dough on a pastry board and work it until you get a soft and compact dough, wrap it in plastic wrap and let it rest in the refrigerator for 15 minutes.
Take the dough, cut it into slices and prepare some cords, with a knife cut them into dumplings and form the castagnole, making them twirl between the palms of your hands.
Place the “castagnole” on a drip pan lined with greaseproof paper and heat the oil in a frying pan.
When the oil is hot, start frying and as soon as they become golden, drain them and place them on a tray covered with paper towels.
Let cool, then sprinkle with icing sugar.
