Mascarpone Apple cake, easy recipe for a delicious variation on the classic apple pie.

The dough is soft and tasty thanks to mascarpone cheese and the scent of apples and cinnamon reminds us that autumn is coming!




  • 4 eggs
  • 1 cup of sugar
  • 1 cup+1 tbsp of mascarpone cheese
  • 1 1/4 cups. of  all purpose flour
  • 1 tbsp of baking powder
  • 4 apples
  • 1/2 teaspoon of cinnamon (optional)
  • icing sugar to taste (optional)


In a bowl we break the eggs and start mixing adding the sugar, mascarpone cheese, flour and baking powder.

We clean and cut into pieces two apples to insert in the mixture along with half a teaspoon of cinnamon.

Mix with a spoon.

Prepare a 10 inches baking pan with a sheet of baking paper on the bottom.

Pour the mixture and level with a spatula.

Cut two more apples into thin slices and place them over the entire surface of the cake.

Then sprinkle with sugar.

Bake at 350 F for 45 minutes in a static oven, or 325 F for 45 minutes in a fan oven.

Once cooked let cool a few minutes then open the cake pan and arrange the cake on a plate.

To garnish we mix a pinch of cinnamon to powdered sugar and sprinkle all over the cake.
