Ingredients
  

  • cups of all purpose flour
  • 1 cup of potato starch you can use cornstarch or coconut flour
  • 1 cup of sugar
  • 1 egg
  • 1/2 cup of butter
  • 1/4 cup of milk
  • 1/8 cup of cocoa powder
  • 1/8 cup of dark chocolate

Instructions
 

  • In a bowl, we work the butter and sugar with electric whips so that they are well blended.
  • Then we add one egg and a little at a time the milk.
  • Sift and incorporate the flour and potato starch several times : mix with the whisk, then when the consistency becomes too stiff, transfer the dough to a pastry board and knead it with our hands.
  • Let’s make a smooth and uniform dough ball, put it in a container, cover with a sheet of plastic wrap and let it rest in the refrigerator for 30 minutes.
  • After the necessary time has elapsed, let’s take the dough again; take about 1/4 of it, add the cocoa and chopped dark chocolate : let’s knead it again with our hands so that it colors.
  • Let’s divide the cocoa dough into smaller pieces and make cords about 1 cm (0.39 inches) in diameter.
  • Instead, we roll out the light part with a rolling pin to a thickness of about 4-5 mm (0.16-0.20 inches).
  • We cut out rectangles of white dough about 6-7 cm (2.36-2.75 inches) wide and place a cocoa shortbread string in the center, then fold and seal the edges well .
  • Then we cut every 5-6 cm (1.97-2.36 inches) to make our cookies.
  • We make by pressing decorative streaks on the surface with the tines of a fork , finally we place the cookies on a baking sheet lined with baking paper and bake in a ventilated oven preheated to 350 F for about 20 minutes .
