Apple and Ricotta Cake is a simple cake to prepare and is light, it is an even softer variant of the traditional apple cake, and the addition of ricotta makes it even softer and creamier.

It is an ideal dessert for a snack or a tasty breakfast that will surely please adults, but especially children.



YIELD: Serves 6 to 8


  • 250 grams (9 oz) plain flour
  • 250 grams (9 oz) ricotta
  • 3/4 cups of sugar
  • 2 eggs
  • 1/4 cup of butter
  • 2 apples
  • 1/2 cup milk
  • 1 tsp baking powder
  • icing sugar for dusting as needed
1. Wash, peel and slice the apples. Drizzle with some lemon juice to prevent browning. Set aside. Also reserve some extra slices for decorating later on.
2. Beat the eggs along with the sugar until the mixture turns thick and creamy.
3. Add in the milk and beat to combine.
4. Next add the melted butter.
5. Followed by the ricotta. Beat again
6. Using a sieve to add in the flour and baking powder. Mix to attain a homogenous mixture.
7. Add the apple slices and mix with the help of a wooden spoon.
8. Decorate the top of the cake with extra apple slices.
9. Pour the batter in a greased baking tin lined with parchment paper. Bake at 350 F for 40 minutes until light golden brown in colour. If a skewer comes out clean when inserted into the cake, means it’s done.
Let cool and sprinkle with icing sugar before serving.

    This sounds heavenly. Though I do have a couple of questions. What type of apple do you suggest to use in the recipe? And what size pan are you using to make the cake?

      You can use Golden or Granny Smith.

      And 9 or 10 inches pan. I use 10
