How to Make SOFT APPLE COOKIES

Soft apple cookies, easy and fast to prepare apple treats perfect to accompany tea in the afternoon snack, as a snack, breakfast or presented in a buffet of desserts!


 

 

Makes: about 20 cookies

INGREDIENTS:

  • 1½ cups of 00 flour
  • ¼ cup of butter
  • 1/2 cup of granulated sugar
  • 1 tsp baking powder
  • 1 egg
  • 1 small apples
  • juice of 1 or 2 lemon
  • flour (in addition, after the apples)
  • superfine sugar to taste
  • icing sugar to taste

 

DIRECTIONS:

Peel the apples and cut them into cubes.

Sprinkle them with the juice of half a lemon and mix.

Prepare the classic shortcrust pastry.

Combine the flour, sugar, cold butter in pieces and the egg.

Finally, add the teaspoon of baking powder.

Knead all the ingredients either by hand, in a planetary mixer or in a robot (whipping the flour and butter first) until you have a soft, dry dough.

Add the apples, draining them of excess lemon.

Incorporate the apples and gradually add more flour until the dough is firm and non-sticky and resembles shortcrust pastry.

Cut off small pieces of dough and form into balls, rolling them in the palms of your hands.

Dip each ball first in superfine sugar and then in powdered sugar.

Lay them on parchment paper far from each other.

Preheat the oven to 350 F in static mode and bake the soft apple cookies for 15-20 minutes until golden brown.

Cracks will form in the baking process, all normal.

 

TIPS
The apple cookies should be taken out of the oven while they are still soft.

As they cool they will take on the right consistency.
