Orange & Ricotta Squares….without oil and butter with juice and peel, super fluffy and fragrant.
Makes: 8 squares
INGREDIENTS:
- 3 eggs
- 350 grams (12 oz) of ricotta cheese
- 3/4 cup of sugar
- half juice of 1 orange
- 1 orange peel (grated)
- 1 1/4 cups of 00 flour
- 2 tsp cinnamon powder
- 2 tsp baking powder
- icing sugar to taste
DIRECTIONS:
Put the three eggs and sugar in a bowl, whip with electric whips until the mixture is puffy and fluffy.
Add the zest of the grated orange and the juice of half of it, turn everything with the whips or a spoon.
Add the ricotta, work the mixture well with electric whips.
Incorporate sifted flour with baking powder and cinnamon.
Mix everything together with a spoon or electric whisk.
Pour the batter into a baking pan about 12 X 16 inches in size with parchement paper inside, level and bake in a preheated static oven at 350 F for about 25 minutes.
Let the resulting cake cool, cover it with plenty of icing sugar and then cut it into squares, there goes the cake!
