How to Make Super Light BAKED APPLE FRITTERS

My apple fritters are super light, as I didn’t add any butter, oil or other fats to the batter: just flour, egg and a little sugar.

I tried several times before getting a result that satisfied me … and I discovered a key trick, or rather two, for the success of these wonderful apple pancakes! Find out in the recipe below!


Break the shell of the egg and drop the white into the bowl (as when you need to separate the egg white from the yolk); locate the thin film that contains the yolk, and gently pierce it with a toothpick.

Allow the yolk to come out as much as possible, holding the film firmly with your fingers.

When this is done, you can discard the foil and continue with the preparation of the cake.

That film that contains the yolk is the vitelline membrane of the egg, and it is precisely that which gives the egg that characteristic smell that many people don’t like (including me).


The first fundamental step for the success of baked apple fritters is to dry the apple slices well before dipping them into the batter: in this way, moisture will be reduced and the batter will remain adherent to the apple slice, and the fritters will have a rounder shape!




Makes about 12 Apple Fritters


  • 3/4 cups of 00 flour
  • 1/2 cup of granulated sugar
  • 1 egg
  • 2 tsp of baking powder
  • 0.03 tbsp of vanilla extract
  • zest of an orange or lemon
  • 1/2 cup of milk (or rice milk)
  • 2 apples
  • icing sugar to taste



Beat the eggs with the sugar until light and fluffy.
Add the milk, flour, baking powder, vanilla and grated orange zest (lemon is fine too), mix until smooth.
You’ll need to get a nice thick mixture, so that it sticks to the apple.
Remove the skin and core from the apples, and cut them into slices half a centimeter thick.
Dry the apple slices, placing them on a sheet of kitchen paper, and covering with another sheet (or flour them lightly).
Heat oven to 338 F.
When the apple slices are nice and dry, dip them in the batter and place them on the baking sheet lined with baking paper.
Bake the apple fritters in the oven for about 20 minutes, until lightly browned.
Sprinkle icing sugar over the apple fritters and serve them piping hot or cold.
