Today we offer you a simple and perfect dessert for snack, loved especially by children.
It is a cake poured with jam filling.
- 1 egg
- 100 grams egg white (from 3 large eggs)
- 1/2 cup of granulated sugar
- 1 cup of 00 flour
- 4 tsp of lemon juice
- 1/2 cup of low-fat white yogurt
- 4 tbsp of sunflower oil
- 1 tsp of baking powder
- 1 tsp of vanilla extract
- a pinch of salt
- apricot jam to taste
- icing sugar to taste
Whip the eggs and egg whites with the sugar for about 5 minutes, until frothy.
Add the salt, oil, yogurt and lemon.
Incorporate the flour, vanilla and baking powder.
Pour half of the mixture into a buttered and floured 10 inches baking pan (or lined with parchment paper) and bake in a preheated oven at 350 F for about 20 minutes.
After 20 minutes take the pan from the oven and pour the jam on the cake, creating a generous layer and making sure to leave about 1cm from the edges.
Cover with the other half of the dough and bake again for about 15 minutes.
And here is ready our cake!
Once it has cooled we can dust it with powdered sugar!
