Apple and ricotta cake is super easy to make and can be customized by using other types of fruit, such as pears or bananas.
The “classic” apple and ricotta one, however, remains inimitable.

INGREDIENTS:
- 1 cup of fresh ricotta cheese
- 4 tsp of milk
- 1/2 tbsp of honey
- 1/4 cup of butter
- 4 cup of apples
- 2 eggs
- 1 1/8 cups of sugar
- 1 lemon
- 1 1/2 cups of all purpose flour
- 2.7 tsp (12 grams) of baking powder
- powdered sugar to taste
DIRECTIONS:
Peel the apples and cut them into medium-sized pieces.
Beat eggs with sugar with whisk until frothy.
Add the ricotta, and butter previously melted in a bain-marie, grated lemon peel and flour sifted with baking powder.
Add the apples and mix slowly.
Pour the apple and ricotta pie mixture into a buttered and floured (or lined with baking paper) baking pan and bake for 50 minutes at 350 F.
Let rest and serve the apple and ricotta cake slices after dusting them with powdered sugar.
