An Italian classic that will not disappoint!

Old-Fashioned Italian-Style Sausage & Peppers

  • Sausage Casing (if making own sausage)
  • Funnel (if making own sausage)
  • Stuffing Horn (if making own sausage)


If Making Own Sausage

  • 1 lb Ground Meat (Pork, Veal/Pork Mix, or Beef/Pork)
  • 1 tsp Salt
  • 1 tsp Pepper

Remaining Ingredients

  • 1 lb Italian Sausage (if buying)
  • 1 Red Pepper sliced
  • 1 Yellow Pepper sliced
  • 1 Onion diced
  • 1 lb Potatoes diced


Make the Sausage

  • Add ground meat, salt and pepper into a bowl.
  • Slip the open end of prepared casing over a funnel tube. Work casing onto tube leaving room for tying a knot.
  • Push meat through funnel and into casing (using tool or hands).
  • Tie knot


  • Sauté the sausage in a large frying pan over medium heat with just enough water to cover the bottom of the pan.
  • When the sausage turns gray, pour off the water and continue cooking until the sausage browns on both sides.
  • Remove the sausage, cut it into serving size pieces and set aside.
  • Add the potatoes to the same pan and sauté for 5 minutes.
  • Add the rest of the vegetables and continue sautéing until they are fork-tender.
  • Add a tablespoon of water if the pan seems too dry.
  • Return the sausage to the pan and cook until it is hot.
  • Serve immediately.
