The soft lemon cookies are sweet-smelling, very crumbly, perfect for snack or breakfast, but also to be offered as a dessert at the end of the meal, perhaps accompanied by a lemon custard.

Although they are very easy to prepare, they are really delicious, thanks to the extraordinary aroma of lemon, which makes us want to eat them one after another, without ever feeling full.

The light coating of icing sugar, then, makes them also very delicious to the eye.




  • 2 1/8 cups of all purpose flour
  • 1 medium egg
  • 1/2 cup of sugar
  • ¼ cup + 3 tbsp of butter
  • 2 tbsp of baking powder
  • peel and juice of 1 lemon
  • a pinch of salt
  • granulated sugar to taste
  • icing sugar to taste



To prepare the soft lemon cookies place the softened butter at room temperature, sugar and pinch of salt in a bowl.

With the help of the whisk work everything until you get a smooth and soft cream.

Add the egg, mix well and add the lemon juice and zest.

Continue to stir the mixture for a few minutes so that the lemon juice mixes well with the rest.

At this point add the sifted flour and baking powder a little at a time.

Once you have obtained a very soft and smooth mixture place it in a glass bowl covered with plastic wrap and let it rest in the refrigerator for about 1 hour.

After the time of rest in the refrigerator, take the dough and, make balls about the size of a walnut.

Pass them in the granulated sugar and then in icing sugar.

Place the lemon balls, well spaced out, on a baking sheet lined with parchment paper.

Bake the soft lemon cookies in a preheated, static oven at 356 F for about 15 minutes.

Once cooked, do not touch your soft lemon cookies because they will be very soft and risk breaking.

Wait for them to cool and then transfer them to a nice cookie tin.
