Ricotta ring cake is a butterless cake, perfect for a great breakfast or snack.

To prepare the Ricotta  ring cake we can use the ricotta cheese that we like best, in fact both sheep and cow’s milk ricotta will do.

A soft and pleasant cake to eat, in fact thanks to its softness and delicate taste it can be paired with coffee, cappuccino, tea and fruit juice without any problems.

Try our recipe for ricotta ring cake without butter, really easy to prepare and share with the whole family.






  • 2.4 cups of all purpose flour
  • 1 cup of ricotta cheese
  • 1 cup of sugar
  • 3 eggs
  • 1 tsp of baking powder
  • 1 lemon
  • a pinch of salt
  • icing sugar to taste

To flour the cake pan:

  • all purpose flour
  • butter




In a bowl, work the eggs with the sugar and a pinch of salt, then gradually add the flour, mixed with the baking powder, the juice and grated zest of one lemon, and the ricotta cheese.

Mix until the ingredients are well blended, then pour the mixture into a cake pan previously greased with butter and floured.

Bake in a preheated oven at 350 F for 30 minutes.

To check the baking, stick a wooden stick in the center of the cake; if it comes out clean and dry, the cake is ready.

Let it cool and then dust it with icing sugar.
