YIELD: Makes 8 squaresINGREDIENTS:
- 2 1/2 cups ricotta
- 3/4 cup sugar
- 1/4 cup heavy cream
- 2 tbsp full fat yogurt
- 1/2 cup + 1 tbsp cornstarch
- 3 eggs
- 1 tbsp lemon zest
- 1 tbsp vanilla extract
- icing sugar to taste
METHOD:1. In a medium bowl, beat the eggs with the zest of a lemon and vanilla
2. Gradually add in the sugar, beat until thick and creamy
3. Next add the heavy cream and yogurt.4.Add in the cornstarch. Beat at low speed.5. Add in the ricotta and beat again to incorporate the ingredients.6. The mixture should attain a thick cake batter like consistency.7. Pour the batter in a greased and lined square or rectangular baking tin. Measuring around 3 inch high and 10 inches in length.8. Bake in a preheated oven at 340 F for 40 to 45 minutes or until the surface of the quadrotti turns light golden brown in colour. Leave to cool on a wire rack.9. Cut into squares and sprinkle with icing sugar before serving.
