Nonna’s Italian Potato Croquettes

YIELD: Makes 20
INGREDIENTS:
  • 1.45 lb potatoes
  • 1/4 cup parsley
  • 2 tbsp plain flour
  • 1 beaten egg
  • 4 tbsp grated parmigiano reggiano
  • salt, black pepper, paprika to taste
  • bread crumbs as needed
  • vegetable oil for frying as needed
METHOD:
1. Boil the potatoes until soft.
2.Mash the potatoes by fork or with the help of a potato masher.
3. Add salt, pepper and paprika
4. Add the chopped parsley
5. Add the cornstarch and parmigiano reggiano cheese. Mix well to combine.
6. Divide into equal pieces.Shape into croquettes, you can make designs with the help of a fork if you like.
7.  Dip each croquette into the beaten egg.
8. Now roll in the breadcrumbs
9. Fry on medium heat until light golden brown and crispy on both sides.
10. Transfer to a paper towel to remove excess oil. Serve hot with your favourite dip or ketchup.
