INGREDIENTS:
- 8 medium potatoes
- 1 cup of mozzarella cheese
- 2 cups of cherry tomatoes
- 4 tbsp (1 stick) of butter
- 5 tsp of extra virgin olive oil
- 2 onions
- oregano to taste
- salt to taste
- pepper to taste
DIRECTIONS:
First of all peel the potatoes and cut them into medium-sized pieces.
Now place them in a baking dish together with the onion sliced very finely.
Add salt and pepper (the latter must be freshly ground) and drizzle with a little extra virgin olive oil.
Bake the pan and cook the potatoes for about 45 minutes at 390 F in a preheated oven.
While the potatoes are cooking, dice the mozzarella and cherry tomatoes into small pieces.
At about fifteen minutes from the completion of cooking, add both the mozzarella and the cherry tomatoes to the potatoes and also add the chopped butter.
When the potatoes are cooked, remove them from the oven, let them cool for a couple of minutes and then serve them at the table.
