Pizzicotti: Almond & Lemon Sicilian Typical Cookies

Delicious Sicilian almond paste desserts, super soft, easy to make, with very few ingredients, and with an amazing lemon scent.
Everyone loves them and everyone says WOW when they eat them!!!

Their name comes from the fact that before they are baked they are pinched with the fingers twice so as to give them precisely the typical, unique shape.



Almond & Lemon Sicilian Typical Cookies

  • 2 Cups Almonds
  • 1 Cup Sugar
  • Juice of a Lemon
  • 3 Egg Whites
  • Whole Almonds to taste
  • Powdered Sugar to taste


  • Finely chop the almonds with the sugar.
  • Grate the zest of one lemon.
  • Squeeze two teaspoons of lemon directly into the ‘mixture and mix.
  • Add the ‘egg white and mix well .
  • With the help of a teaspoon form small balls and gently turn in the powdered sugar and place them on a baking sheet covered with parchment paper.
  • Once placed on the baking sheet with your thumb and forefinger “pinch’ them horizontally and vertically and place an almond in the center.
  • Bake for 12 minutes in a preheated oven at 350 F, in the middle shelf of the oven.
  • Wait 10 minutes with the oven open before taking them out.
