RICOTTA & COCONUT CAKE

This cake with ricotta cheese is perfect for a hearty breakfast or snack, and it is super easy to make, without using power tools such as planetary machines or beaters.

INGREDIENTS:

  • 2 cups of ricotta cheese
  • 3 eggs
  • 1/3 cup of sugar
  • 1/3 cup of raisins
  • 1/3 cup of flaked coconut
  • ¼ cup of all purpose flour
  • 1 lemon peel
  • 1 tbsp of lemon juice
  • 1 tsp of vanilla extract
  • icing sugar

 

 

DIRECTIONS:

Mix ricotta cheese, eggs, sugar, raisins, coconut, flour, lemon zest, and vanilla in a bowl.

Pour into a previously buttered and floured cake pan.

Preheat the oven to 350 F and bake for about 40 minutes you can check the baking of the cake by inserting a toothpick, if it comes out dry the cake is cooked. Let it cool completely.

Gently peel it off by helping yourself with a knife along the edge. place it on a tray and dust it with icing sugar.
