Sicilian Sciu’: Fantastic Ricotta Cream Puffs

Cream puffs filled with ricotta or sciù, as they are commonly called in Sicilian, are tempting puffs that originate from the choux pastry from which they are made.

The name sciù comes from a simplified translation of the French word choux.

For the Choux Pastry

  • 6 Eggs
  • 2 cups Water
  • 1 1/2 cups All Purpose Flour
  • 2/3 cup Butter
  • pinch Salt

For the Filing

  • 1/2 cup Sugar
  • 2 cups Ricotta Cheese
  • 1 cup Powdered Sugar


  • First, we prepare the ricotta cheese for the filling.
  • In a bowl, we add the ricotta and sugar and with a whisk stir vigorously.
  • Place water, butter, salt and sugar in a saucepan; bring to a boil, remove from heat and add flour.
  • Mix well and put back on the heat, stirring continuously until the dough sizzles and is firm.
  • Allow to cool, add the eggs one by one and mix well.
  • Knead the mixture, form into balls and bake at 390 F for about 30 minutes and then at 300 F with the oven ajar until dry.
  • Fill with ricotta and sprinkle with powdered sugar.
