  • 24 oz 700 grams of pork rinds
  • 1 cup of breadcrumbs
  • 1/2 cup of grated Pecorino cheese
  • garlic to taste
  • parsley to taste
  • 3 cups of tomato sauce
  • extra virgin olive oil to taste
  • 2 onions
  • salt and pepper to taste


  • To prepare a juicy pork rind roulade dish, you first need to flame the pork rinds, wash them thoroughly and boil them in plenty of salted water.
  • Then prepare a mixture with the breadcrumbs, grated pecorino cheese, garlic, parsley, a pinch of salt and a generous sprinkling of black pepper (possibly freshly ground).
  • When the pork rinds are cooked, cut them into slices about 8 cm. thick, place a little of the mixture on each one, wrap and secure with a toothpick.
  • In a saucepan, brown the sliced onion, add the tomato sauce, season with salt and pepper, lay the roulades on top and let them simmer for at least an hour and a half.
  • Finally serve the pork rind roulades piping hot on the table for eating.
