Ingredients
  

  • 14 oz 400 grams veal meat for stew
  • 2 cups of tomato puree
  • 2 cups of potatoes
  • 1 1/2 frozen peas
  • 1 cup of vegetable broth
  • 1 cup of onion minced
  • 1 clove of garlic
  • a handful of parsley
  • sage leaves to taste
  • 1/4 cup of extra virgin olive oil
  • 1/4 cup of butter
  • salt to taste

Instructions
 

  • Finely chop the onion and wilt it in a saucepan with the oil and butter;
  • Add the garlic clove, sage leaves and veal chunks;
  • Let brown until the meat is colored on all sides;
  • Peel the potatoes and cut them into chunks;
  • Add them to the stew, add the peas and cover with vegetable broth;
  • Cook for 25 minutes;
  • Add the tomato puree and continue cooking for 10 minutes;
  • Sprinkle with chopped parsley and add salt to taste.
