Grandma’s vegetable soup is a traditional dish made with garden vegetables and legumes.

A poor dish that our grandmothers often prepared with garden produce.

There are many versions of minestrone, even depending on the season in which it is prepared.

This is my recipe, I hope you like it!









  • 1 cup of celery
  • 1 cup of carrots
  • 1 cup of zucchini
  • 1 cup of leek
  • 1 cup of potates
  • 1 cup of tomatoes
  • 1 cup of beans
  • 1 cup of peas
  • 1 cup of cabbage
  • 8-10 slices of bread
  • extra virgin olive oil to taste
  • 1/4 cup of Parmigiano Reggiano cheese
  • 6 cups of vegetable broth




Finely chop zucchini, carrots, potatoes, and celery.

Cut the leek into julienne strips.

Cut the cherry tomatoes in half.

Cut the savoy cabbage into coarse pieces.

In a tall pot, we brown the vegetables in a little oil.

We continue until they begin to stick to the pan.

We cover the vegetables with the broth.

We let it cook until the vegetables are cooked.

We take the bread, cut away the edges, and cut it into small cubes.

We fry the bread in plenty of olive oil.

When it reaches golden brown, we remove it and dry it with paper towels and mix with Parmigiano Reggiano cheese.

We serve in the dishes and add the bread croutons.
