Sauté is a chopped mixture of vegetables (also known as mirepoix) which is browned in oil or butter.

Few and simple ingredients, usually celery, carrot and onion, are finely chopped and browned in a fat (hot oil or butter) which then flavors the preparation.

The basic rule for a good soffritto is to cook the vegetables very gently, to give them time to soften and flavor without burning.

For the preparation of soffritto you must first cut the vegetables, then proceed to heat the chosen fat, oil or butter, and thus brown the vegetables.

How to choose vegetables
In order to prepare the soffritto it is first necessary to choose fresh vegetables in season, celery, carrot and onion can be found all year round, and this is one of the reasons why these are almost always the vegetables of choice. In case not all ingredients are available, it is possible to prepare soffritto with onion only.

How to cut vegetables
The vegetables chosen must be cut into very small cubes, to do this you can put the cleaned and chopped vegetables in the pitcher of a blender and blend them until you get the desired texture, or proceed by hand. To prepare the chopped vegetables of the soffritto by hand start by washing the celery stalk under running water to remove any soil contained in the stem.

Cut the leaves on the top, then divide the rib in half and again in strips, then put the strips next to each other on a cutting board and reduce them into small cubes. Peel the carrot after cutting off the ends, cut it lengthwise and dice it.

Now move on to the onion: peel it, cut it in half, place the cut part on a cutting board and cut it again in both directions (length and width) to get the small cubes.

How to brown the chopped vegetables
When the vegetables are ready you can heat in a pan, preferably steel with a thick bottom, the extra virgin olive oil, butter or margarine, and as soon as the fat is heated add the chopped celery, carrot and onion and let it brown over very low heat, stirring often, for about ten minutes.

During the cooking process turn it often and pay attention to the cooking process in order to avoid it from getting dark and bitter. At the end of cooking it can be blended with white wine or water.

 

How to store soffritto
After cooking, soffritto can be stored in the refrigerator by placing it, once cooled, in a closed glass container. In this way the soffritto will keep for 24 hours.

If you want to keep it longer you can also freeze it. To freeze the soffritto always wait until it cools, try to remove any liquid, squeezing it slightly and then put it in bags suitable for freezing.
