  • 2 zucchini
  • 2 eggs
  • 1/2 cup of all purpose flour
  • 1/4 cup of Parmigiano Reggiano or Pecorino Romano cheese
  • salt and pepper to taste
  • oil for frying


  • Grate the zucchini using the large-hole part of the grill pan.
  • Put the frying pan with the oil already on the stove over medium heat.
  • In a bowl combine the zucchini, eggs, flour, Parmigiano cheese salt and pepper.
  • Mix well and quickly without working hard.
  • Pour the mixture by spoonfuls into the hot oil and brown them on both sides, turning them several times so that they cook well.
  • Remove the fritters from the pan and lay them on paper towels and then pass them on a serving plate.
  • A pinch of salt and straight to the table!
